Elevate traditional roasted carrots with this delicious, zesty sauce.
Preheat the oven to 200°C./400°F. Arrange the carrots on a large baking tray. Drizzle 1/2 cup of the olive oil over the top, and sprinkle with 1 teaspoon of the salt. Use your hands to roll the carrots around the pan, making sure they’re well coated.
Place in the oven to roast for about 30 minutes. The carrots should be tender and slightly caramelized.
While the carrots roast, make the herby sauce. In a food processor, combine the remaining 1/2 cup of olive oil, parsley, lemon zest, garlic, and remaining salt, and blend together.
Once the carrots are finished roasting, arrange them on a platter and spoon the herby sauce over them. Sprinkle with crumbled feta and pistachios.
