Place an unsealed glass jar of honey in a small saucepan. Fill the pan with water so it comes up 2-5cm/1-2” around the jar. Warm the water over low heat until the honey becomes thin and runny but ensure it does not boil. Remove the jar from the saucepan with care. Add the fresh thyme directly into the honey in the jar.
Secure the lid on the jar and give it a good shake to mix the thyme with the honey. Place the jar in a spot that receives sunlight, like a windowsill, and let it sit for 1-5 days for the flavours to infuse.
After the infusion period, reheat the jar in the same manner as before to make the honey runny. Position a fine mesh strainer over a clean bowl. Pour the honey through the strainer to remove the thyme leaves, then transfer the strained honey back into the jar.
Store the thyme-infused honey in a cool, dark place.
