The chicken needs to marinade for at least 4 hours or overnight.

Instructions

  1. Combine the chilli, paprika, shallot, salt, pepper and oil in a mortar and pestle and grind into a paste. Place chicken in a bowl with the marinade and toss well to combine. Cover and refrigerate for at least 4 hours or overnight.

  2. Preheat gas barbecue to medium heat.

  3. Place chicken tenderloins over direct heat on barbecue, cooking for 3 minutes on each side until chicken reaches 73°C/160°F in centre.

  4. Serve with chicken wraps or tortillas and salad vegetables.  

Note

Alternatively, bake in the oven at 180°C/350°F for 20 minutes.
