The chicken needs to marinade for at least 4 hours or overnight.
Combine the chilli, paprika, shallot, salt, pepper and oil in a mortar and pestle and grind into a paste. Place chicken in a bowl with the marinade and toss well to combine. Cover and refrigerate for at least 4 hours or overnight.
Preheat gas barbecue to medium heat.
Serve with chicken wraps or tortillas and salad vegetables.
